A COUPLE OF THINGS...
- Check out this inspirational video. A coach/friend e-mailed this to me and I thought it was pretty cool.
- I am now hooked on granola. B and I have been making granola lately and can't stop eating it. Breakfast, lunch, dinner, snack...you name it. Try this recipe for something yummy...
5 Cups oats
1 Cup nuts (I've been using walnuts)
1/3 Cup maple syrup
1/3 Cup coconut oil
1t vanilla
1/2t salt
2t cinnamon
1/2 Cup fruit (I've been using raisins)
Bake at 325 for 1 hour. Be sure to stir every 15 minutes.
- I am a huge wimp when it comes to cold weather. I don't ever know how I grew up in New York and then went to school in Minnesota. Yesterday it was 80 degrees here in Austin, today it is 50 and I am frozen. I ended up riding on the trainer and then running on the treadmill today because it was just too darn cold out.
- Update on foot...the doctors appt. went well last week. They took more x-rays and everything seems to be o.k. The MRI (5 weeks ago) showed a stress reaction in my heel and 5th metatarsal but I don't have much pain anymore. So, I finally have doctors permission to start increasing my mileage. I actually already have been increasing my mileage slowly over the past couple of weeks and am going to go for a 10 mile run tomorrow! No speed work for a few more weeks though.
So, I guess that was more than a couple of things. Time for some granola.
